The minute I saw the Cheddar Garlic Chicken & Waffles on the Saturday brunch menu at Hudson’s at Main Street, I had to try it.
It features house-made cheddar and garlic-infused waffles topped with buttermilk fried chicken tenders, tossed in Hudson’s house-made Buffalo sauce, and finished with a delicious bacon jam.
Sounds crazy, right? But this dish just works on a lot of different levels.
The “Close Your Eyes” Flavor
Every bite leaves you smiling. You know the smile I’m talking about—when you take a bite of something so darn good, you just close your eyes for a second, savor the flavor, and smile.
The minute you bite into the waffle, you instantly get hit with a combo of cheddar and garlic. It may seem like an odd combination for a waffle, but it works.
The Real “Wow” Factor
The two flavors blend well, but the real magic happens when you add in the Buffalo-covered chicken tenders and a bit of that bacon jam.
It is literally an explosion of flavor in your mouth: the heat from the Buffalo sauce, the savory bacon, the sharp cheddar, and the garlic all hitting at once.
Note on the Heat: The Buffalo sauce definitely has some heat to it. It isn’t overwhelming, but if you hate heat, this dish might not be for you.
The Execution
The chicken tenders were cooked well. I was worried they would be overcooked or dry, but that wasn’t the case. The batter wasn’t falling off either, which was a huge plus. And I really appreciate that the waffles were made in-house.
Josh’s Take
My only con—and this was just a personal preference—is that I felt the bacon jam could have been a tiny bit sweeter just to offset the strong savory flavors in the waffle. But the jam was still real tasty.
I never thought I would be eating cheddar garlic waffles with spicy chicken tenders on top, but it works, and it is delicious.
